Each student must, on termination of the course, write a thesis, an in-depth analysis of a specific problem related to the food and wine sector. The end of the course is marked by the defence of the thesis in front of a jury of professionals. This work, which is a virtual passport for the integration and evolution of the chosen candidate, may eventually be considered for publication.
